First, we select the good quality durians and put them into a container. As to ensure the hygiene standards, dirt and dust on the durian will be removed before proceeding to the next step. In order to ensure it’s served fresh, durians are then exposed to liquid nitrogen at -100℃. The process of liquid nitrogen takes around 70 minutes. To put the fruits into “hibernation” so the freshness can be preserved for up to 18 months. This is the reason Sri Walis used the Cryogenic Nitrogen Freezing technology as Cryogenic freezing is the fastest form of flash-freezing, and is used to preserve food because it keeps the food the freshest tasting.
In terms of packaging, every single durian is packed in vacuum packaging and placed in a styrofoam box. This is to ensure durians have a long shelf life and be packaged well to protect them during the international transportation process. Besides that, a label will be attached on the styrofoam box in order to distinguish the species of durians easily. After going through all the process, durians are ready to be shipped. Every single durian from Sri Walis is packed on the collection spot and deliver to South America as soon as possible. When the durian arrives in South America, the customer would receive a pack of completely nitrogen frozen durian. The durian is still fresh as it has been nitrified. Durian is ready to serve after defrosting. In fact, frozen durian tastes better than what we normally eat as it’s richer in taste.
