Cryogenic freezing is the fastest form of flash-freezing, and is used to preserve food because it keeps the food the freshest tasting. The way it works is by pumping liquified nitrogen (N) into the chamber, which quickly cools the durian to -100℃. These durians can be preserved for up to 18 months, although they won’t stay in the freezer that long.
When the durians are completely frozen after about 70 minutes, every single durian is packed separately with vacuum packaging and well placed in a styrofoam box. This is to ensure the durians have a long shelf life and be packaged well to protect them during the international transportation process. Then a label mentioning the type of durian will be attached to the styrofoam box. Lastly, load it into a truck and it is ready to ship.
